My lobsters just arrived, now what do I do?
Your lobsters can be kept in their cartons until you are ready to cook them. Open the carton to give them air. If they will not be cooked within a few hours try to store in a cool place or refrigerate if possible, but not necessary. Placing a damp cloth over them is good but do not put them in fresh water even if you add salt to it.

How long will they last before I have to cook them?
Live lobsters should be cooked within 24 hours. Once they are cooked the meat may be refrigerated for 3-4 days.

What's the green and red substance in the lobster?
The red substance is the roe, also known as coral, while the green is called the "tomalley". Both are considered to be a delicacy by some, others choose to discard. Serve as desired.

Why are my lobsters not red?
During the cooking process, protein molecules in the shell bend into shapes that absorb different wave lengths of light and result in reflecting the color red
